Pineapple and Carrot cake is one of those really yummy moist cakes. Found on page pg388 of the Classics cookbook, the recipe below has taken inspiration from the original and converted to be Thermomix friendly.
Ingredients
260g SR. Flour
1/2 tsp ground cinnamon
130g sugar
200g carrot
2 eggs
1 x 450g can pineapple, drained (reserve the juice for icing if desired)
90g vegetable oil
Method
Preheat oven to 180 degrees. Grease cake or loaf tin
Bring sugar on speed 7/5secs
Add carrot and chop on speed 5/3secs
Add the rest of the ingredients to the thermomix bowl.
Blend on speed 4/20secs.
Pour into cake tin and cook for 45min.
