One day a week my kids have after school activities. Its a bit of a head spin making sure each child gets to the right activity, Its also a precise schedule with me dropping off and picking up.
On this day my kids need an afternoon snack that can be munched on the go and its something i need to plan better for as the kiddos get hungry, but dinner is often not made until after we hit home. Fruit is great, but not always filling. Dips help provide some calcium and protein, incorporate some vegies and are relatively mess free.
Todays dip is Bacon and Garlic and pretty yummo.
250g cream cheese. I use homebrand for all of my dips
1 rasher of bacon
2 cloves garlic
1 chicken stock cube
salt and pepper to taste
Finely chop the bacon, onion and garlic. Pan fry until bacon cooked through. You could chop and cook this part in the thermo. I choose not to because I wan the bacon and onion chopped just so. Its a preference thing.
Add the cream cheese to the thermo along with the milk. Whiz on 5/20secs. Longer if its straight from the fridge and cold.
Add the s+p, stock cube and bacon mix. Whiz until combined, about 4/20secs.
Serve with crackers and vegie sticks.
